1 cup flour
3 tablespoons sugar
2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon allspice
2 eggs, separated
1 cup milk
6 tablespoons butter or margarine, melted
1 cup mashed cooked or canned pumpkin
In large bowl, stir together flour, sugar, baking powder, salt, cinnamon and allspice; set aside. With whisk beat egg yolk, milk, butter or margarine and pumpkin until well blended. Stir into flour mixture just until blended. In small bowl of mixer, beat egg whites until stiff, but not dry, peaks form. Fold gently into pumpkin mixture. Bake in preheated waffle iron until waffle stops steaming. Good with maple or fruit syrup. Makes 4 - 6 servings.
