Spicy Pumpkin Melange














1 large onion, chopped ( 1 cup)
1 1/4 teaspoons salt
1 green pepper, chopped (3/4 cup)
3 tablespoons butter or margarine
1 clove garlic, crushed
2 cups mashed cooked or canned pumpkin
1 1/2 teaspoons curry powder

In medium skillet saute onion, pepper, garlic, curry powder and salt in butter or margarine until vegetables are tender. Stir in pumpkin. Simmer gently, stirring occasionally, 5 minutes or until heated through. Serve as an exotic side dish. Makes 4 servings.
