Pumpkin Cheese Ball















2 cups (8 ounces) shredded cheddar cheese
4 ounces cream cheese (1/2 - 8 ounce package)
1/4 cup solid pack pumpkin
1/4 cup pineapple or apricot preserves
1/2 teaspoon pumpkin pie spice
1 pretzel rod (broken in half)
Decorations such as black olives, wedges of bread, red peppers, etc. to make face features, if desired) Assorted crackers

1. Beat cheeses, pumpkin, preserves, and spices in medium size bowl until smooth. Cover; refrigerate 2 - 3 hours or until cheese is firm enough to shape.
2. Form mixture into pumpkin shape; place on serving plate. Using knife, score vertical lines down the sides. Place pretzel rod in top for stem.
3. Decorate to look like a pumpkin face.
4. Cover loosely; refrigerated until serving time. Serve with crackers.
