Wash pumpkin, cut in half, remove seeds and strings, place on a baking sheet and put into 400 degree oven for about 30 minutes or until you can put a fork easily right through the skin. Carefully take out of the oven and while the pumpkin is still warm, remove thick peel.
Place in food processor and puree until it has a silky texture. Use as you would canned pumpkin, most small cans of pumpkin are 2 cups.
Can be frozen, small pumpkinswork the best!
VERY GOOD fresher tastes better than canned.
Bonus recipe:
Don't throw away those seeds!!! Rinse, soak for a couple of days in heavily salted water. Place on baking dish, bake in 300 degree oven for about 1/2 - 1 hour until dried. OR you can dry in a food dehydrator.
